Ingredients
- Chicken on bones 1.2 to 1.5 kg, cut into small pieces
- Gram flour (besan) 4 heaped tsp
- Yogurt 5 tbsp
- Ginger paste 1 tsp
- Garlic paste 1 tsp
- Juice of 1 lime (or 2 tbsp)
- Salt 1 tsp
- Red chili powder to taste
- Turmeric powder 1/2 tsp
- Garam masala 1/2 tsp
- Coriander powder 1 heaped tsp
- Cumin powder 1 heaped tsp
- Black pepper powder 1/4 tsp
- Chat masala 1/2 tsp
- Hot sauce/red chili sauce 1 tbsp
- Soy sauce 2 tbsp
- Red food color 1/4 tsp (or as needed to make the marination dark red)
- Rice flour 2 to 3 tbsp
- Oil for deep frying
Preparation
- Clean, wash and drain the chicken pieces well.
- In a mixing bowl, add all the ingredients except rice flour and mix. Taste the marination and adjust the seasoning if needed.
- Add the marination to the chicken and mix well.
- Cover and marinate in the refrigerator overnight.
- When you want to fry, heat the oil on a medium flame, take out the chicken and add the rice flour just before frying. Mix and immediately put the pieces one by one into the oil.
- Fry for 6-7 minutes or until the chicken is cooked through.
- Enjoy with mint raita or imli chutney!
Quick Crispy Fried Chicken
