Quick Stir-fried Chinese Rice

Ingredients

  • Oil 2 tbsp
  • Garlic chopped 1 tbsp
  • Spring onions 4 tbsp
  • Green beans 1.5 cups, cut into long pieces (I used frozen)
  • Bell peppers any color 1.5 cups, finely chopped (I used yellow, green and red)
  • Boiled rice 3 cups
  • Soy sauce 4 tbsp
  • Eggs 3
  • Garnish: Spring onions 4 tbsp

Preparation

  1. Heat oil in a wok and add garlic and spring onions.
  2. Sauté for 1 minute.
  3. Add green beans and bell peppers. Stir fry at high for 3-4 minutes until the moisture from the veggies has evaporated.
  4. Add boiled rice and soy sauce.
  5. Mix well. Make a hole in the middle of the wok and add eggs.
  6. Scramble the eggs and mix with the rice.
  7. Garnish with spring onions.
  8. Serve hot with any Chinese curry. Enjoy!
