Ingredients
- Oil 2 tbsp
- Garlic chopped 1 tbsp
- Spring onions 4 tbsp
- Green beans 1.5 cups, cut into long pieces (I used frozen)
- Bell peppers any color 1.5 cups, finely chopped (I used yellow, green and red)
- Boiled rice 3 cups
- Soy sauce 4 tbsp
- Eggs 3
- Garnish: Spring onions 4 tbsp
Preparation
- Heat oil in a wok and add garlic and spring onions.
- Sauté for 1 minute.
- Add green beans and bell peppers. Stir fry at high for 3-4 minutes until the moisture from the veggies has evaporated.
- Add boiled rice and soy sauce.
- Mix well. Make a hole in the middle of the wok and add eggs.
- Scramble the eggs and mix with the rice.
- Garnish with spring onions.
- Serve hot with any Chinese curry. Enjoy!
