Quick Veg Chowmein

Ingredients

To Boil the Spaghetti

  • Spaghetti 1 packet (raw)
  • Water for boiling
  • Salt 1 tsp
  • Oil 2 tbsp

To Make Chowmein

  • Oil 2-3 tbsp
  • Onion 1 medium, sliced
  • Garlic cloves 2, chopped
  • Ginger 1 tsp, grated
  • Green chilies 1-2, sliced
  • Red Bell pepper 1, sliced
  • Green bell pepper 1, sliced
  • Yellow bell pepper1, sliced
  • Cabbage 1 cup, shredded
  • Carrot 1, julienned
  • Soy Sauce 2 tbsp
  • Chili Sauce 3 tbsp
  • Vinegar 2 tbsp
  • Ketchup 4 tbsp
  • Salt 1/2 tsp (or to taste)
  • White pepper powder 1/2 tsp

 

Preparation

  1. Boil the spaghetti in water with some salt according to the package instructions.
  2. Once done, take out from the water and run tap water over it to stop the cooking process. Drizzle some oil to prevent them from sticking.
  3. In a small bowl, mix all the sauces (soy sauce, chili sauce, ketchup, vinegar, salt and pepper) and keep aside for later use.
  4. In a wok, heat 2-3 tbsp oil and add the onions, ginger and garlic and green chilies. Stir fry until the onions are soft.
  5. Add the all the veggies (bell peppers, carrot, cabbage) and stir fry and sauté on high flame for a minute, make sure you do not overcook the veggies, its recommended to keep them crunchy.
  6. Add the boiled spaghetti and the sauce mixture. Toss it for a minute until well combined. Taste and adjust the seasoning if needed.
  7. Quick Veg Chowmein is ready. Serve it immediately with ketchup or any other sauce of your choice. Enjoy!
