Red Velvet Crinkle Cookies (Chewy Goodness)

Ingredients

  • Oil 1/4 cup
  • Granulated sugar 1/2 cup
  • Brown Sugar 1/4 cup
  • Small Eggs 2 (if large then add 1.5)
  • Vanilla essence 1 tsp
  • Liquid Red Food Color 1 tsp
  • All-purpose flour 1 + 2/3 cup
  • Cocoa Powder 1/8 cup
  • Baking Powder 1 tsp

Dusting

  • Icing Sugar 1/4 cup
  • Corn Flour 1 tsp

Preparation

  1. In a mixing bowl, add oil, granulated sugar, brown sugar, eggs, vanilla essence, food color and whisk well.
  2. Add more color if needed to make it bright red.
  3. Now add flour, cocoa powder and baking powder. Mix until just combined.
  4. This dough nowhere looks like a cookie dough. It is VERY soft.
  5. TIP: If the dough is so liquid that its hard to shape into a ball then add 1 tbsp of flour and mix.
  6. Refrigerate the dough for 1 hour so that it becomes manageable.
  7. Meanwhile, mix icing sugar and corn flour for dusting.
  8. 20 minutes before taking out the dough, start the oven and preheat it at 160°C
  9. Now take out the dough and spoon out 1 inch blob and transfer to the icing powder bowl and roll into a ball, more icing sugar you coat on the cookie dough more profound crinkles will be formed when baked.
  10. Place the iced cookie balls on a parchment lined baking tray at least an inch apart and bake at 160°C for 10 minutes or until the dough does not look shiny.
  11. Take out and allow to cool in the same tray.
  12. Enjoy with coffee or tea!
