Red Velvet pancakes with Cream Cheese Topping

Ingredients

Pancake Mix

  • All-purpose flour 3/4 cup
  • Sugar 1/4 cup
  • Cocoa powder 1/8 cup
  • Baking Powder 1 tsp
  • Baking Soda 1/4 tsp
  • Salt 1/4 tsp
  • Vinegar 3/4 tbsp
  • Milk 3/4 cup
  • Vanilla extract 1 tsp
  • Egg 1
  • Oil 1 tbsp
  • Red food color 3/4 tbsp or as per the preference

Topping

  • Cream Cheese 2 tbsp
  • Vanilla essence 1 tsp
  • Powdered sugar 1 tbsp
  • Milk 1/4 cup (more if needed)

Preparation

  1. In a bowl, add flour, sugar, cocoa powder, baking powder, baking soda, salt and vinegar and mix.
  2. Now add milk, vanilla, egg, oil and food color.
  3. Food color can be added more if needed.
  4. Mix everything until well combined.
  5. Now heat a pan on lowest heat and grease with oil.
  6. Pour pancake batter, cover, and allow to cook on lowest flame. Red color will turn brown if the flame is high.
  7. As the pancakes cook you will start to see bubbles on top. Let it cook covered, until the upper surface of the pancake is not shiny anymore.
  8. At this stage, flip the pan cakes for 10 seconds and take out in a plate.
  9. TOPPING: Mix everything together and adjust the consistency to your liking by adding more milk if needed.
  10. Pour the topping over pancakes and enjoy!
