Roasted Veggie Salad
Ingredients
- Cauliflower 1 medium sized
- Carrots 2
- Onion 1 big
- Salt 1/2 tsp
- Red chili powder 1/4 tsp
- Turmeric powder 1/2 tsp
- Cumin powder 1 tsp
- Oil 1 tbsp
- Fresh coriander
- Black olives
Salad dressing:
- Mayonnaise 3 tbsp
- Lemon juice 1 tbsp
- Garlic powder 1/4 tsp
Preparation
- Preheat the oven at 200°C Cut the cauliflower into bite-sized florets
- Cut carrots into thick slices.
- Cut onions into thick slices
- Add salt, red chili powder, turmeric powder, cumin powder and oil to the veggies.
- Mix and bake for 20-25 minutes in a preheated oven at 200°
- In the meanwhile, make the dressing by mixing mayonnaise, lemon juice and garlic powder.
- Take the veggies out of the oven and add the dressing in dollops.
- Sprinkle some black olives and chopped fresh coriander.
- Serve hot.
