Russian Eggs

Ingredients

  • Eggs 12, hard billed
  • Mayonnaise 3 tbsp
  • Mustard paste 1 tbsp
  • Pickled beetroots, chopped (or any other pickle in vinegar)
  • Salt, pepper, chili sauce (optional)

Preparation

  1. Peel and cut the hard-boiled eggs in half.
  2. Separate the yolks and transfer to a food processor.
  3. Add mayonnaise and mustard paste and process until the yolk mixture is smooth and creamy.
  4. Pipe through a piping bag (star tip) or simply use a spoon to put the egg yolk mixture into the egg white halves. Sprinkle with paprika.
  5. Top off with pickled beetroots.
  6. Serve and Enjoy!
