Seed Bars for Hormonal and Memory Issues – Oven Version

Ingredients

  • Pumpkin seeds 1 cup
  • Black Sesame seeds (or white) 1/4 cup
  • Flax seeds 1/4 cup
  • Almonds 1/2 cup, chopped
  • Coconut chips (unsweetened) 1/2 cup
  • Honey 4 tbsp
  • Peanut butter 2 tbsp
  • Coconut oil 2 tbsp
  • Dark chocolate 200 grams

Preparation

  1. In bowl, mix pumpkin seeds, sesame seeds, flax seeds, almonds and coconut chips.
  2. Add honey, coconut oil and peanut butter.
  3. Mix well to coat everything.
  4. Preheat the oven at 160˚C using upper and lower rod.
  5. Place a butter paper on a baking tray and transfer the seeds mixture on to the tray.
  6. Use a spatula to press everything tightly into a thin layer and bake at 160˚C for 15-20 minutes or until the seeds turn golden.
  7. Take out of the oven and allow to cool to room temperature.
  8. Melt dark chocolate and pour on the top and spread evenly. Allow the chocolate to set.
  9. Cut into sticks and refrigerate for few hours. This will help the sticks to set and then you can remove them from the baking paper easily.
  10. Store in an airtight container in the refrigerator up to 2 months.
