Shrimp Pulao

Ingredients

Shrimp Marination

  • Shrimps 200-300 grams
  • Salt 1/2 tsp
  • Red chili powder 1/2 tsp
  • Turmeric powder 1/4 tsp
  • black pepper powder a pinch
  • garlic paste 1/2 tsp

Rice

  • Rice 2 cups, washed and soaked in water
  • Oil 1/3 cup
  • Green cardamoms 4
  • Cinnamon sticks 2
  • Cloves 2
  • Cumin seeds 1 tsp
  • Onion 1 big, chopped
  • Garlic paste 1/2 tsp
  • Potatoes 2, cut into small chunks
  • Salt to taste
  • Red chili powder to taste
  • Turmeric powder 1/2 tsp
  • Cumin powder 1.5 tsp
  • Coriander powder 2 tsp
  • Water 4 cups
  • Fresh coriander 1/2 cup, chopped
  • Green chilies 4-5

Preparation

  1. Marinate the shrimps in salt, red chili, turmeric, black pepper and garlic for 15-20 minutes.
  2. Heat oil in a wok and add the shrimps. Cook on high for 3-4 minutes until the shrimps are cooked. take out and keep aside.
  3. In the same oil add cinnamon sticks, cloves, cardamoms and cumin seeds and allow to crackle.
  4. Add chopped onions and fry until golden.
  5. Add garlic paste and sauté until aromatic.
  6. Add potatoes and fry for 1 minute.
  7. Add salt, chili, turmeric, cumin and coriander powder and sauté for 30 seconds.
  8. Add water to the potatoes and bring to boil.
  9. Add drained rice and allow cook on high until the rice absorb all the water.
  10. When all the water is absorbed, put the rice on dum (steam) for 10 minutes.
  11. After the dum is complete and the rice is fully cooked, turn the flame off and add the shrimps.
  12. Mix and serve.
  13. Enjoy!
