Skinny Chocolate Muffins
Ingredients
- Wheat flour 1/2 cup
- All-purpose flour 2/3 cup
- Granulated sugar 1/3 cup
- Unsweetened cocoa powder 1/3 cup
- Baking soda 1 teaspoon
- Cinnamon powder 1/4 teaspoon
- Salt 1/4 teaspoon
- Oil 1/4 cup
- Thick yogurt 1/2 cup
- Large Eggs 2
- Milk 1/2 cup
- Vanilla Essence 1 teaspoon
- Milk chocolate chips 1/2 cup
Preparation
- Preheat the oven to 180°C.
- Grease a muffin tin with oil.
- In a large bowl, combine the dry ingredients: wheat flour, all-purpose flour, sugar, cocoa powder, baking soda, cinnamon powder and salt. Stir to combine.
- In another bowl, whisk together the eggs, yogurt, milk, oil and vanilla essence.
- Add the dry ingredients spoon by spoon and stir in the wet mixture, stirring just until combined (don’t over-mix).
- Pour the batter into the muffin tin. Fill 3/4 th of the cups and sprinkle chocolate chips on top.
- Bake at 180°C for 15-20 minutes or until a toothpick inserted in the center comes out clean. Take out and allow to cool before taking the muffins out.
- Serve with tea or coffee. Enjoy!
