Skinny Chocolate Muffins

Ingredients

  • Wheat flour 1/2 cup
  • All-purpose flour 2/3 cup
  • Granulated sugar 1/3 cup
  • Unsweetened cocoa powder 1/3 cup
  • Baking soda 1 teaspoon
  • Cinnamon powder 1/4 teaspoon
  • Salt 1/4 teaspoon
  • Oil 1/4 cup
  • Thick yogurt 1/2 cup
  • Large Eggs 2
  • Milk 1/2 cup
  • Vanilla Essence 1 teaspoon
  • Milk chocolate chips 1/2 cup

Preparation

  1. Preheat the oven to 180°C.
  2. Grease a muffin tin with oil.
  3. In a large bowl, combine the dry ingredients: wheat flour, all-purpose flour, sugar, cocoa powder, baking soda, cinnamon powder and salt. Stir to combine.
  4. In another bowl, whisk together the eggs, yogurt, milk, oil and vanilla essence.
  5. Add the dry ingredients spoon by spoon and stir in the wet mixture, stirring just until combined (don’t over-mix).
  6. Pour the batter into the muffin tin. Fill 3/4 th of the cups and sprinkle chocolate chips on top.
  7. Bake at 180°C for 15-20 minutes or until a toothpick inserted in the center comes out clean. Take out and allow to cool before taking the muffins out.
  8. Serve with tea or coffee. Enjoy!
