Ingredients (makes 3 layers of 8 inch cake)
- Butter 115 grams, at room temperature
- Coconut oil 50 grams
- Granulated sugar 160 grams
- Eggs 3 big sized, or 190 grams at room temperature
- Vanilla essence 1 tsp
- Full fat yogurt 120 grams, at room temperature
- Milk 60 grams, at room temperature
- Plain flour 270 grams
- Baking powder 15 grams
- Salt 1 pinch
Preparation
- Preheat the oven at 180°C.
- Prepare an 8-inch pan by applying butter and dusting some plain flour on it. Place parchment paper at the bottom.
- In a bowl, add butter and coconut oil. Beat using an electric hand mixer until combined.
- Add granulated sugar and beat until the mixture is light in color.
- Add eggs one by one and start beating until combined.
- Add vanilla extract, yogurt and milk and beat. The mixture at this stage might look curdled. This means you need to beat more until it looks creamy and smooth.
- In a separate bowl, sift together the plain flour and baking powder. Add salt to it and mix.
- Add this flour mix to the butter and egg mixture and mix using electric mixture until well combined. Do not overmix.
- The batter will be thick.
- Spoon the batter into the baking pan and place in the oven.
- Bake at 180°C for 30-35 minutes.
- Check the cake using the toothpick method.
- Take the cake pan out and allow it to cool down for 10 minutes before taking out of the pan.
- Let the cake come to room temperature before frosting.
- Enjoy!
