Ingredients
- Pasta 1 packet (400 grams)
- Oil 1 tbsp
- Butter 3-4 tbsp
- Onion 1, finely chopped
- Garlic cloves 3, finely chopped
- Fresh Tomatoes 1-2 chopped into big chunks
- Tomato can 1/2
- Oregano 1/2 tsp
- Salt to taste
- Black pepper to taste
- Water to cover the pasta
- Ketchup 1/2 cup
- Spinach (blanched) 1/2 cup
- Kidney beans (boiled) 1 cup
- Enoki mushrooms a handful
Preparation
- Heat oil and butter to a cooking pot and add onions and garlic.
- Sauté until soft. Now add chopped tomatoes and tomato can.
- Add a little water, cover and allow to cook until soft.
- Now add oregano, salt and pepper, give a stir.
- Add pasta packet and enough water to cover the pasta.
- Cover and allow to cook until the pasta is fully cooked.
- At this stage add more water to make the pasta soupy according to your preference. Add ketchup, spinach, kidney beans and enoki mushrooms. Boil for 2-3 minutes.
- Soupy tomato pasta is ready.

Soupy Tomato Pasta
