Stuffed Bhindi | Bharwa Bhindi
Ingredients
Spice mix For stuffing
- Okra (Bhindi) 400 grams
- Salt 1/2 tsp
- Red chili powder 1 tsp
- Turmeric powder 1/2 tsp
- Garam Masala 1 tsp
- Coriander powder 2 tsp
- Cumin powder 1 tsp
- Dried fenugreek (Methi) 1.5 tsp
- Black salt 1/2 tsp
- Lemon Juice 1 tbsp
- Oil 2 tbsp or as needed
Other ingredients
- Tomatoes 2 large, chopped
- Onion 1 large, chopped
- Salt to taste
- Coriander powder 1 tsp
- Green chilies 2-3
- Oil 6-7 tbsp
Preparation
- Prepare the spice mix for stuffing by adding all the ingredients to a bowl and mixing. Add oil to moisten the spice mix so that it stays inside the okra once stuffed.
- Wash and pat dry the okra using a kitchen towel. Any moisture remaining in the okra will lead to sticky/slimy okra when cooked.
- Remove the tips of the okra and skit vertically. Fill in the stuffing.
- Now add 6-7 tbsp oil in a wok. Add chopped onions and cook until slightly golden.
- Add chopped tomatoes, salt and coriander powder and cook until raw smell goes off.
- Add okra, and some green chilies, cover and cook on low flame for 15-20 minutes until the okra is soft and ready. Sprinkle garam masala and stuffed bhindi (bharva bhindi) is done!
- Enjoy with homemade roti or rice.
