Stuffed Bitter gourd – Bharwa Karelay

Ingredients

  • Bitter gourd big sized 8
  • Onions 3 biggest size available, finely chopped
  • Tomatoes 4 biggest size available, finely chopped
  • Fresh coriander 1 cup chopped
  • Green chilies 2-3 chopped
  • Fresh mint 1/2 cup chopped
  • Juice of 1 lemon
  • Salt to taste
  • Red chili powder 1.5 tsp or to taste
  • Turmeric powder 1 tsp
  • Coriander powder 4 tsp heaped
  • Garam masala 2 tsp
  • Cumin powder 2 tsp
  • Oil 1/2 cup or more (as needed)

Garnish

  • Fresh coriander
  • Green chilies

Preparation

  1. Peel the bitter gourd, make a slit, and remove the seeds.
  2. Apply 2 tsp of salt and 1 tsp of turmeric powder to the bitter gourds and soak them in water for at least 1 hour.
  3. After an hour, thoroughly wash the bitter gourds and keep aside.
  4. In a bowl, add finely chopped onions, tomatoes, green chilies, coriander, mint, juice of one lemon, salt, red chili, turmeric powder, coriander powder, cumin powder and garam masala.
  5. Mix well and fill the stuffing in the bitter gourds.
  6. Bind them using a string or thread (as shown in my video) so that the stuffing does not come out during cooking.
  7. In a cooking pot, heat the oil and add bitter gourds.
  8. Allow to fry on medium flame until they start to turn golden.
  9. Now add leftover stuffing on top.
  10. Turn the flame to lowest setting, cover and cook for 35-40 minutes.
  11. Lastly, after 40 minutes, cook for 1-2 minutes on high flame if you see liquid in the masala.
  12. Serve hot with roti/paratha/rice. Enjpy!
