Ingredients
Step 1
- Desi ghee 1/2 cup
- Suji (Semolina) 1+ ½ cup
- Desicated coconut 1/2 cup
Step 2
- Desi ghee 1 tsp
- Almonds 10-15, chopped
- Kishmish (Raisins) 1/4 cup, washed
Step 3
- Water 1/2 cup
- Sugar 1+ ½ cup
Step 4
- Green Cardamom (hari ilaichi) powder 1/2 tsp
Preparation
- On low flame, add desi ghee and suji in a wok and roast until suji turns aromatic.
- Flame should be low otherwise the suji will burn.
- Now add coconut and roast for 1-2 minutes until you can smell the roasted coconut. Keep the wok. Aside.
- Now in a pan heat 1 tsp of desi ghee and fry the almonds and raisins until the raisins double in size. Remove in a bowl.
- Now to the same pan, add water and sugar and cook on low until it starts boiling. Stirring frequently, cook until 1 string sugar syrup consistency is reached.
- Add this sugar syrup to the suji along with nuts and cardamom powder.
- Mix and allow the suji to absorb sugar syrup for 3-4 minutes.
- The mixture should be crumbly. Shape into laddoos while the mixture is hot but manageable.
- NOTE 1: If the mixture is too crumble you can addfew tbsp of luke warm drinking water to the mixture and shape them immediately.
- NOTE 2: If you do not make laddoos and allow the mixture to cool and later heat it, it will become rock hard.
- Enjoy with tea!
