Makes 4 cups
Ingredients
- Sweet potatoes 2 medium sized
- Butter 1 tbsp
- Onion 1 small, chopped
- Ginger paste 1/2 tsp
- Garlic paste 1/2 tsp
- Chicken cube 1
- Water 2-3 glasses as needed
- Salt if needed
- Black pepper powder as needed
- Cumin powder 3/4 tsp
- Turmeric powder 1/4 tsp
Topping
- Thick cream
- Dried parsley (or fresh coriander)
- Pomegranate arils
Preparation
- Boil and peel the sweet potatoes.
- In a pot, heat the butter and add onion, ginger and garlic. Allow to cook until the raw smell is gone.
- Add this onion mixture, chicken cube, boiled sweet potatoes to a blender, along with a glass of water and blend until smooth.
- Add back to the pot and add salt, black pepper and cumin powder.
- Add more water if necessary.
- Cover and allow to cook on low for 10-15 minutes.
- Soup is ready.
- Top with fresh cream parsley and pomegranate arils.
- Enjoy!
