Ingredients
- Rice 2 cups, soaked in water for at least 1 hour
- Oil 1/4 cup
- Onion 1, chopped
- Garlic 4 cloves, chopped
- Tomatoes 3 big sized, skin removed, chopped
- Chicken cubes 2
- Red chili powder (optional)
- Salt if needed (chicken cubes already contain salt
- Water 3.5 cups
Preparation
- Heat oil in a pot and add onion and garlic.
- Sauté until lightly golden.
- Add chopped tomatoes and chicken cubes. If preferred, add red chili powder too.
- Allow to cook until the tomatoes paste starts to boil.
- Now add drained rice to the tomato mixture.
- Cook, stirring occasionally for 2-3 minutes or until the liquid from the tomatoes is absorbed completely by the rice.
- Add 3.5 cups of water and cook on medium to high until the water is absorbed by the rice.
- Now cover and put the rice on dum (steam) on low flame until the rice is tender.
