Tomato Rice

Ingredients

  • Rice 2 cups, soaked in water for at least 1 hour
  • Oil 1/4 cup
  • Onion 1, chopped
  • Garlic 4 cloves, chopped
  • Tomatoes 3 big sized, skin removed, chopped
  • Chicken cubes 2
  • Red chili powder (optional)
  • Salt if needed (chicken cubes already contain salt
  • Water 3.5 cups

Preparation

  1. Heat oil in a pot and add onion and garlic.
  2. Sauté until lightly golden.
  3. Add chopped tomatoes and chicken cubes. If preferred, add red chili powder too.
  4. Allow to cook until the tomatoes paste starts to boil.
  5. Now add drained rice to the tomato mixture.
  6. Cook, stirring occasionally for 2-3 minutes or until the liquid from the tomatoes is absorbed completely by the rice.
  7. Add 3.5 cups of water and cook on medium to high until the water is absorbed by the rice.
  8. Now cover and put the rice on dum (steam) on low flame until the rice is tender.
  9. Enjoy!
