Upside Down Pineapple pancakes
Ingredients
- Fresh Pineapple 1, cut into thin slices, or 1 pineapple can
- Glazed cherries 7-8
- Butter 1 tbsp
- Plain flour 2 cups
- Salt 1/2 tsp
- Baking soda 1 tsp
- Baking powder 3 tsp
- Sugar 1/2 cup
- Milk 1.5 cups
- Pineapple juice 1/4 cup (or milk)
- Vanilla essence 1 tsp
- Honey or maple syrup for topping
Preparation
- On a hot fry pan, apply butter and place the pineapple slices and grill on both sides until they look little bit caramelized.
- Take out in a plate for later use.
- In a bowl, add flour, salt, baking powder, baking soda, sugar, and mix.
- Then add milk, pineapple juice and vanilla essence and mix well.
- Place a caramelized pineapple slice on frying pan and place a cherry in the middle. Now pour some batter on top.
- Allow the batter to bubble before you flip.
- Now flip and cook on the other side.
- Repeat for all the pancakes.
