Upside Down Pineapple pancakes

Ingredients

  • Fresh Pineapple 1, cut into thin slices, or 1 pineapple can
  • Glazed cherries 7-8
  • Butter 1 tbsp
  • Plain flour 2 cups
  • Salt 1/2 tsp
  • Baking soda 1 tsp
  • Baking powder 3 tsp
  • Sugar 1/2 cup
  • Milk 1.5 cups
  • Pineapple juice 1/4 cup (or milk)
  • Vanilla essence 1 tsp
  • Honey or maple syrup for topping

Preparation

  1. On a hot fry pan, apply butter and place the pineapple slices and grill on both sides until they look little bit caramelized.
  2. Take out in a plate for later use.
  3. In a bowl, add flour, salt, baking powder, baking soda, sugar, and mix.
  4. Then add milk, pineapple juice and vanilla essence and mix well.
  5. Place a caramelized pineapple slice on frying pan and place a cherry in the middle. Now pour some batter on top.
  6. Allow the batter to bubble before you flip.
  7. Now flip and cook on the other side.
  8. Repeat for all the pancakes.
  9. Enjoy!
