Vanilla Sheet Cake

Vanilla Sheet Cake

Ingredients

  • All purpose flour 2 cups
  • Baking Soda 1 teaspoon
  • Salt 1/4 teaspoon
  • Granulated Sugar (table sugar) 1 cup
  • Eggs 2 (at room temperature)
  • Yogurt 1/2 cup (at room temperature)
  • Vanilla extract 1 teaspoon
  • Butter 1 cup
  • Water 1 cup

Glaze

  • Icing Sugar 1 cup
  • Milk 3 tablespoons
  • Vanilla extract (clear) ½ teaspoon

Fruit Topping

  • Any fruits of your choice (strawberry, grapes, apples etc) peel, grate and cook on a medium to low flame until softened. Blend in a blender with a little water and sugar to make a smooth paste. Cook again until desired thickness is reached.

 

Preparation

  1. Preheat the oven to 180*C.
  2. Sift the all purpose flour in a bowl. Sift baking soda to it. Add salt and granulated sugar.
  3. Mix these dry ingredients well.
  4. In a pan, add butter and water. Heat on low flame until the butter is just melted. Do not let it boil.
  5. In another bowl, add eggs, yogurt, and vanilla extract. Whisk until well combined.
  6. Add this egg mixture and melted butter mixture to the dry ingredients and mix well.
  7. Grease a sheet pan with butter and dust with all purpose flour. Shake off the excess.
  8. Add the batter to the sheet pan and bake in the pre-heated oven for 15-20 minutes until the toothpick inserted comes out clean.
  9. Prepare glaze after you take the cake out of the over. Mix the icing sugar, milk and vanilla extract together and immediately pour over the sheet cake. If you prepare this glaze before the cake is baked, it will start to set so prepare it only when you want to use it immediately.
  10. Serve the cake topped with either fruit sauce or glaze. If using fruit sauce, do not forget to add fresh cream on the top.
  11. If you have stored the cake in the refrigerator, warm in the microwave for a few seconds before serving. It tastes heavenly when served warm. Enjoy!
