World’s Best Pineapple Carrot Muffin

Ingredients

  • Plain flour 1.5 cup
  • baking powder 2 tap
  • Baking soda 1 tsp
  • Cinnamon powder 1 tbsp
  • Salt 1 tsp
  • Eggs 2 at room temperature
  • Yogurt 1/4 cup at room temperature
  • Brown sugar 1 cup (adjust accoring to your taste)
  • Vanilla 1 tsp
  • Oil 1/2 cup
  • Grated carrots 2 cups
  • Pineapple can 1
  • Raisins 1/2 cup

Preparation

  1. Preheat the oven at 180°C.
  2. In a bowl, sift plain flour.
  3. Add baking powder, baking soda, cinnamon powder and salt. Mix and keep aside.
  4. In another bowl, add eggs, yogurt, brown sugar, vanilla essence and oil.
    Whisk until just combined. Avoid over-mixing.
    now drian juice from the pineapple slices and cut into small tid bits. Add to the wet mixture.
    Now pour this wet mixture into the dry mixture bowl and mix. Batter will be pretty thick.
    Add grated carrots and raisins. Mix until combined.
    Place 12 muffin liners on a muffin tray.
    Fill the muffin liners with the batter to the top of the liners. This creates a yummy muffine top when baked.
    Bake in the oven for 18-20 minutes at 180°C using upper and lower heat.
    Check the muffins with a toothpick and take out if the toothpick comea out clean.
    Enjoy warm muffins with tea or coffee.
