Anda Masala Curry

Ingredients
Eggs
Boiled eggs 6
Red chili powder 1/4 tsp
Turmeric powder 1/4 tsp
Oil 1/2 cup
Masala
Onions 2
chopped
Cumin seeds 1 tsp
Ginger paste 1 tsp
Garlic paste 1 tsp
Green chilies 2-3
sliced
Tomato paste 5 tbsp
Yogurt 1 cup
Salt to taste
Red chili if needed
Garam masala 1tsp
Coriander powder 2 tsp
Water ad needed

Instructions
Peel the hard boiled eggs, sprinkle chili powder and turmeric powder and mix.
Heat oil in the cooking pot and add the eggs. fry for 2-3 minutes and take out.
In the same oil add chopped onions and cumin seeds. Fry until aromatic.
Add ginger and garlic paste and green chilies. Fry for a minute and then add tomato paste. Cook for 1 minute.
Add yogurt, salt, red chili if needed, garam masala and coriander powder.
Cook for a minute. Add 1 cup of water. Cover and cook on low for 6-8 minutes until the oil rises to the top.
At this stage, add the eggs and more water if needed.
Cover and cook for 5 minutes.
Lastly, add green chilies.
Enjoy with roti or rice.
