BBQ Chicken Boti

Ingredients
Marination
Boneless Chicken breasts or thighs cut into 1.5" pieces 1 kg
Thick yogurt 1.5 cup
Mayonnaise 1/2 cup
Garlic Paste 1 tbsp
Ginger paste 1 tbsp
Oil 1/4 cup
Salt to taste
Red chili powder 3/4 tbsp or to taste
Garam Masala Powder 1 tbsp
Cumin Powder 1 tbsp
Cinnamon Powder 1/2 tbsp
Paprika powder 1.5 tbsp
Chat masala 1/2 tbsp
Amchur powder
Dry mango powder 1/2 tbsp
Red food color 1/2 tbsp
Lemon juice 4 tbsp
Other
Oil for grilling
Skewers
Bell peppers

Instructions
In a clean dry bowl add the thick yogurt, ginger and garlic paste and the mayo and whisk well until fully combined & smooth.
Next, add all the remaining marination ingredients and mix well.
Add to chicken pieces and marinate for 1 hour or preferably overnight.
Next, skewer the meat and bell peppers in the skewers and set aside.
Heat a griddle or non stick skillet over medium heat. When the pan becomes moderately hot brush it with oil.
Next, place the skewers and cook over medium heat rotating sides from time to time. The meat will be fully cooked in 15 mins.
Now, turn the flame to the highest setting and cook all sides of the BBQ Chicken Boti for that beautiful, charred look.
