Brinjal Rice - Baingan Biryani

Ingredients
Uncooked rice 2 cups
Bay Leaf 2-3
Mustard Seeds (rai) 1½ tablespoons
Big sized egg plant 3
Green chilies 3 (or more to taste) (chopped)
Tomato 1 Big
Salt to taste
Turmeric powder ½ teaspoon
Lemon juice 1-2 tablespoons
Instructions
Wash the rice thoroughly and soak for 30 minutes.
Boil the rice. Cook completely.
Drain and leave aside.
Cut egg plant into 1 inch chunks.
Chop the green chilies.
Heat oil in a pan.
Add bay leaves and mustard seeds until they start to crackle.
Now add egg plant, green chilies, and tomatoes.
Cover and leave to cook until tomatoes are soft.
Once soft add turmeric and salt.
Cover again and leave to cook.
Once done add lemon juice and turn the flame off.
Add the boiled rice and mix thoroughly.
Brinjal (egg plant) Rice - Baingan Biryani is ready.
Serve hot with fresh salad and raita.
