Mix well, taste and adjust salt if needed. Cover and cook for 30-35 minutes until the carrots are super soft. Lentil should also be cooked by then. If needed, you can add more water while cooking.
Now blend the soup using a hand blender until smooth and creamy.
NOTE if using blender, allow the soup to cool first and then blend. Blending hot soup in a blender can cause serious burns. After blending, the soup can be warmed again.
Garnish with freshly chopped coriander. Serve hot.
