Chicken Tandoori Boti

Ingredients
Boneless chicken cubes 500 grams
Ginger paste 1 teaspoon
Garlic paste 1 teaspoon
Green chili paste 1 tablespoon
Lemon juice 2 tablespoons
Fresh cream 2 tablespoons
Cheddar cheese 3 tablespoons
Butter 2 tablespoons (at room temperature)
Yogurt 2 tablespoons
Egg white 1
Salt 1 teaspoon or to taste
Red chili powder 1 teaspoon (or more)
Cumin powder 1/2 teaspoon
Garam masala 1 teaspoon
White pepper powder 3/4 teaspoon
Orange food color 1/4 teaspoon
Instructions
Wash the chicken and remove fat if any.
Cut the chicken into 1-2 inch cubes.
In a bowl, add thick yogurt.
Add fresh lemon juice.
Add ginger paste and garlic paste.
Add green chili paste.
Add butter. Butter should be at room temperature.
Add dry spices like salt, red chili powder, garam masala and orange food colour.
Add dry ingredients like salt, red chili powder, cumin powder, garam masala, white pepper powder and orange food colour.
Add fresh cream.
Lastly, add cheddar cheese.
Mix everything well.
Before adding chicken pieces just taste it and if needed, adjust salt and chili according to your taste.
Now add the chicken pieces and mix well.
Cover and refrigerate overnight. If you are short of time then 2 hours would also do.
After the chicken is marinated, take out from the refrigerator and thread the chicken in wooden or metal skewers.
Grill them on coals. Enjoy with naan and chutney.
NOTE: Chicken Tikka Boti can be made in a pan on stove. When done, smoke with a coal. Enjoy!
