Dahi Fry / Dahi Tadka – Naush Special

Ingredients
Yogurt 1 cup
Oil 2-3 tbsp
Dried red chili
long or round 2
Bay leaves 2
Cumin seeds 1/2 tsp
Onion 1 small
thickly sliced
Green chili 1
Garlic clove 1
Ginger 1 inch
Salt to taste
Turmeric powder 1/2 tsp
Kashmiri red chili powder 1/2 tsp
or red chili powder for extra heat
Garam masala 1/2 tsp
Coriander powder 1/2 tsp
Instructions
Whisk yogurt until smooth and lump free. Keep aside.
Chop together green chili, garlic and ginger in a hand chopper or grater. Keep aside.
In a pan, add oil, red chilies, bay leaves and cumin seeds, fry on low until aromatic.
Add chopped veggies and sauté until the raw smell of ginger and garlic goes away.
Add onions and sauté until the onions are translucent but still crunchy. Crunchy texture gives nice taste to the dahi fry.
Now add salt, turmeric powder, Kashmiri red chili powder, garam masala and coriander powder. Sauté for 30 seconds on low heat and turn the flame off.
Add this mixture to the whisked yogurt and mix well.
Dahi fry is ready.
