Laban 1 Cup (or yogurt 1/2 cup and and 1/4 cup water)

Ingredients for Coating
All-purpose flour 2 Cups
Rice Flour 4 tablespoons
Corn flour 3 tablespoons
Salt (to taste)
Chili Powder 1 teaspoon
Black pepper powder ½ teaspoon

Preparation
In a pot add half a cup of salt and one cup of water.
Dissolve the salt by stirring the mixture over very low heat.
Once the salt is mixed, add 3 cups of ice-cold water.
Add the chicken leg pieces to this mixture and put in the refrigerator for an hour.
For the spice mix, in a bowl mix together coriander powder, paprika powder, red chili powder, onion powder, garlic powder, white pepper powder, salt and light brown sugar.
Take the wings/leg pieces out of the water and discard the water. No need to wash the chicken after taking out of the salt water.
Apply the spice mix on the chicken pieces and keep aside.
In another bowl add laban or yogurt. If you do not have laban then whisk the yogurt until no more lumps are there. Add a few tablespoons of water if the yogurt is very thick
Beat one egg and add to laban. Mix well and add to the chicken pieces and mix again.
Cover and refrigerate for at least 2 hours or preferably overnight.
In the mean time you can prepare the coating mixture. To do so, add the all purpose flour, corn flour, rice flour, red chili powder, black pepper powder and salt into a bowl and mix.
Take the chicken out of the refrigerator and coat each leg piece one by one with the coating mixture.
Keep aside for 20 minutes so that the coating sticks to the chicken pieces really well.
Heat oil in a wok. The temperature is perfect when you dip a skewer in the oil and the oil touching it starts to bubble.
Deep fry the chicken wings on medium heat for 10 mins. If using drum sticks, fry for 15 minutes. This will ensure that the chicken is completely cooked through and the bones are also cooked well.
