For this halwa we prefer to use red carrots. But I used orange ones as red variety was not available in the market.
Clean, wash and peel the carrots.
Now grate them and transfer to a heavy bottom pan.
Turn the flame on and let the carrots cook on a medium flame.
Keep stirring occasionally until the water from the carrots have evaporated.
Now add ghee to the carrots. Increase the flame and saute’ well for 6-7 minutes.
You will start to feel the aroma of carrots in the kitchen.
This is the time to add milk.
Mix and simmer on low until milk reduces and is absorbed well into the carrots. No traces of liquid milk should be there at this moment.
Add raisins and cashews, stir for 2-3 minutes.
Add sugar and mix well till it dissolves completely.
Increase the heat and sauté for another 5 minutes stirring continuously.
When all the moisture in the halwa is evaporated, turn the flame off.
Transfer to a bowl, sprinkle some khoya, raisins and slivered almonds.
Serve hot. Enjoy!
To Make Khoya
Mix all the ingredients and microwave on high for 1 minute.
Take out and mix.
Again microwave for 1 minute.
Take out and mix.
Repeat the process until the khoya becomes clumpy and reaches the desired consistency.
In 4-5 minutes the khoya will be ready.
Allow to cool completely.
Notes
Note: If the cream that you are using is thin then you do not need to add water to the recipe. Just take 1 cup of cream and 1 cup of milk powder and microwave according to the instructions.
