Hot & Spicy Peri Peri Chicken

Ingredients
Boneless chicken 1 kg
Dried red chilies (or fresh birds eye chilies) 7-10
Big red capsicum/bell-pepper 1
Juice of one lemon
Salt 2 tsp
Oregano 1 tbsp
Red chili powder 2 tsp
Oil 1/2 cup
Paprika powder 2 tsp
Ginger paste 1 tsp
Vinegar 4 tbsp
Black pepper 1 tsp
Red or orange food coloring 1/4 tsp
Instructions
Add red bell pepper, lemon, ginger, vinegar, oil and red/orange food color to a blender and blend.
Add the remaining dry spices.
Marinate the chicken with the spice mix for 1 hour.
Grill over high heat until fully cooked.
Use a hot coal and oil to give smoke to the chicken for a barbecue flavor.
Pour the remaining marinade mixture in a pan and cook till it thickens.
Pour over the chicken and serve with rice.
Serve hot. Enjoy!
