Lemon Chicken Rice

Ingredients
Marination
Lemon rind 1 tbsp
Salt 3/4 tsp or to taste
Oregano 4 tsp
Fried onions 1 tsp

Black pepper powder 1/2 tsp
Lemon juice 4 tbsp
Chicken thighs
or any other pieces 1 kg

Rice 2 cups
soaked in water
Onions 3 small
finely chopped
Garlic cloves 8
finely chopped
Oil 5-6 tbsp
Chicken cubes 2
Water 4 cups
Lemon juice 3-4 tbsp
Lemon slice 5-6
Fresh coriander for garnishing
Instructions
Marinate the chicken pieces with the marination ingredients for half an hour.
In a wok, add oil and chicken pieces. Sear on both sides at high heat.
Now turn the flame to medium low and allow to cook until 100% done.
Take out on a plate for later use.
In the same oil, add chopped onions, garlic and leftover marinade. Sauté until golden brown.
Add 4 cups of water and 2 chicken cubes. Allow to boil and add drained rice.
Cover and cook on medium until the rice absorb water.
You can add salt, black pepper and lemon juice according to your taste at this stage.
Lastly, when all the water has been absorbed by the rice, put lemon slices on top and put on dum (steam) for 10-12 minutes.
Garnish with freshly chopped coriander and serve. Enjoy!
