Moroccan Lentil Curry

Ingredients
Black lentil 1.5 cups
Onion 1
chopped
Olive oil 2 tbsp
Cumin powder 1.5 tsp
Coriander powder 1.5 tsp
Turmeric powder 1.5 tsp
Cinnamon powder 3/4 tsp
Black pepper powder 1/2 tsp or more to taste
Carrots 2
chopped
Water 5 cups + Chicken cubes 3
or you can use chicken broth
Salt if needed
Tomato 1 chopped
Lemon juice 3-4 tbsp
Fresh coriander leaves
chopped
Instructions
Heat oil in a pot and saute chopped onions until soft.
Add powdered spices (cumin, coriander, turmeric, cinnamon, black pepper) and carrots and saute for 1 minute.
Next add water and chicken cubes and tomatoes.
Cover and cook on low for 30-40 minutes until lentil is cooked.
Turn the flame off. Wait for 2 minutes and add lemon juice.
Top with fresh coriander and serve immediately with rice.
