NOTE: I did not use any measuring cups or spoons for this recipe. Any cup and spoon would do.
In a mixing bowl, add aata, salt, baking powder and baking soda. Mix well.
Add yogurt and oil and mix roughly.
Now start kneading by adding a little water at a time into a soft dough.
Once the dough is formed, knead for 7-8 more minutes. This will result in soft rotiform inside but crunchy from outside.
Cover and allow to stand for preferably 1.5 hour or at least 1 hour (not less than that).
Now shape into 8 balls.
Heat a pan or tawa on medium to high heat. Non-stick is also fine.
Roll a dough ball into a a little thick roti and apply aata glue with a brush.
Now place the roti on tawa (glue side down) and quickly press it on the tawa using your hands.
Allow the bubbles to form on the roti. In 1 minute or so, whole roti will have bubbles. Now flip the tawa and cook the roti’s top side on direct flame.
