Noodle eggs Casserole

Ingredients
Onion 1/2
Cubed
Bell peppers
cubed
Oil 1 tbsp
Tomato Paste 1 tbsp
Water 1.5 cups
Noodles packets 3
Eggs 4
Salt a pinch
Cheddar cheese 1 cup
or mozzarella cheese
Sun dried tomato for topping
optional
Instructions
Heat oil in a casserole and add onions, bell peppers and sauté until vibrant in colors.
Add tomato paste and mix.
Add water and noodles, cover and allow the noodles to cook on low flame.
When the water evaporates, beat the eggs and salt and pour onto the noodles evenly. Turn the flame as low as possible.
Sprinkle some cheese on top and the sun dried tomatoes.
Cover and allow to cook for 5-8 minutes or until the eggs are cooked through.
Slice and serve immediately. Enjoy!
