Palak Paneer

Ingredients
Spinach 4 handful sized bunch
chopped
Desi ghee (Clarified butter) 2 tbsp
Onion 1 medium
chopped
Cumin seeds 1 tsp
Dried red chili 2-3
Garlic paste 1 tsp
Ginger paste 1 tsp
Salt to taste
Red chili powder 1/2 tsp or more to taste
Turmeric powder 1/2 tsp
Cottage cheese cubes 2 cups
Garam masala powder 1/2 tsp
Coriander powder 3/4 tsp
Green chilies 4-5
whole or chopped (as per the choice)
Instructions
Wash the chopped spinach and drain.
Add to the cooking pot, turn the flame medium, cover and let the spinach wilt, or soften.
Allow to cool a bit and blend to a smooth paste and transfer it back to the same cooking pot.
In a frying pan, heat desi ghee and add onion, cumin seeds and dried red chilies.
Cook until the onions are soft.
Add ginger paste and garlic paste and fry until the raw smell is gone.
Pour this mixture into the blended spinach.
Add salt, red chili powder and turmeric powder. Mix.
Allow to cook until all the water from the spinach evaporates.
Add cottage cheese cubes, give a stir so that the cubes are coated with spinach.
Add garam masala, coriander powder and green chilies.
Give a mix so that the masalas are mixed in.
Palak paneer is ready.
Serve with roti, naan, paratha or even boiled rice.
