Plain Vanilla Tea Cake with Coconut Frosting

Ingredients
Eggs 2 at room temperature
Vanilla essence 1 tsp
Sugar 2/3 cup
Milk 1/4 cup at room temperature
Oil 1/2 cup
All-purpose flour 1 cup
Baking powder 1 tsp
Instructions
Preheat the oven to 160°C.
In bowl, whisk eggs and vanilla until frothy and.
Add sugar and beat until glossy and creamy.
Add milk and oil and whisk for 1 more minute.
Now add baking powder and all-purpose flour and mix until just combined.
Add to an 8-inch greased baking tin and bake at 160°C for 30-35 minutes or until toothpick inserted comes out clean.
Allow to cool to room temperature in the baking tin and then take out in a serving dish.
Pour glaze all over it and top with desiccated coconut.
Enjoy with tea or coffee.
