Plum Chicken

Ingredients
Coating
Boneless chicken 1 kg
cut into cubes
Corn flour 2 tbsp
Egg 1
Plain flour 1 cup
Oil for frying
Sauce
Tomato paste 2 tbsp full
White vinegar 2 tbsp
Chili flakes 1/2 tbsp
Chili sauce to taste
Oyster sauce
or Soy sauce 2 tbsp
Brown sugar 3 tbsp
Salt if needed
Other
Oil 2-3 tbsp
Garlic cloves 3
grated
Fresh plums 6
cut into wedges
Red bell pepper 1
cut into strips
Green bell pepper 1
cut into strips
Yellow bell pepper 1
cut into strips
Water as needed

Plain boiled rice

Instructions
Add corn flour to the chicken and coat properly
After coating is done, add an egg in the coated chicken and mix again.
In another bowl, add plain flour and place each piece of chicken in the flour. Coat with flour.
Heat oil in a frying pan and add the coated chicken pieces to the oil.
Cook until the pieces are fully cooked. Take out and keep aside.
Sauce: In another bowl, mix all the ingredients of sauce and keep aside.
In a wok, heat oil and add the grated garlic. Fry until starts to turn golden.
Add fresh plum wedges and bell peppers into the wok and stir fry on high flame for 5-6 minutes until the bell peppers are vibrant in color.
Add the fried chicken pieces and the sauce.
Mix and add water to your liking.
Mix and cook for 1 minute.
Turn the flame off.
