Roasted Cauliflower Salad

Ingredients
Cauliflower 1 medium sized
Carrots 2
Onion 1 big
Salt 1/2 tsp
Red chili powder 1/4 tsp
Turmeric powder 1/2 tsp
Cumin powder 1 tsp
Oil 1 tbsp
Fresh coriander
Black olives
Salad dressing:
Mayonnaise 3 tbsp
Lemon juice 1 tbsp
Garlic powder 1/4 tsp
Instructions
Preheat the oven at 200°C Cut the cauliflower into bite-sized florets
Cut carrots into thick slices.
Cut onions into thick slices
Add salt, red chili powder, turmeric powder, cumin powder and oil to the veggies.
Mix and bake for 20-25 minutes in a preheated oven at 200°C.
In the meanwhile, make the dressing by mixing mayonnaise, lemon juice and garlic powder.
Take the veggies out of the oven and add the dressing in dollops.
Sprinkle some black olives and chopped fresh coriander.
Serve hot.
