Sirf Aloo ki sabzi (Potato Gravy)

Ingredients
Potatoes 1 kg
cut into thin fries
Oil 1/4 cup
salt to taste
Turmeric powder 1/2 tsp
Red chili powder to taste
Garlic cloves 8-10
finely chopped
Coriander powder 2 tsp
Cumin powder 1 tsp
Water as needed
Instructions
Heat oil and add potatoes, salt and turmeric powder. Cook on medium flame until the potatoes are 70% done.
Add red chili powder, chopped garlic, coriander powder and cumin powder.
Cook for 1 minute and add enough water to cover the potatoes.
Cover with a lid and cook on medium to low flame for 30 minutes or until the potatoes are over cooked and transformed into a gravy.
Serve with rice.
