Brown sugar/jaggery 1 tsp or lessas per your liking
Corn flour 1 tbsp
Instructions
Cut the tomatoes in half and boil with 2 cups of water for 110-12 minutes. Remove the peels using a tong.
Add sliced onion and salt to the tomatoes and cook until the tomstoes and onions are cooked.
Transfer the mixture to a blender. Add garlic cloves, salt (if more is needed), chili flakes, brown sugar and corn flour. Blend until smooth.
Transfer the chili sauce to the same cooking pot and bring to a boil. You can add a little more water at this stage if need be. Cook further for 1 minute until the corn flour thickens the Sauce. NOTE: DO NOT cook the sauce for too long at this stage otherwise the garlic will be cooked and we won’t be able to taste RAW GARLIC in our chili garlic sauce.
Turn the flame off. Sieve the sauce to get silky smooth finish.
Cool to room temperature and enjoy with your favorite snack.
