Thai Chili Lime Fish

Ingredients
Fish
White fish fillet 1 kg
cut into 2 inch cubes
Salt 1/4 tsp
Rice flour 1/4 cup
Oil 3-4 tbsp
Thai Sauce
Oil 1 tbsp
Ginger 1 inch piece
julienne cut
Garlic cloves 6
finely chopped (not grated/paste)
Fresh red chilies 2
sliced
Ketchup 4 tbsp
Soy sauce 2 tbsp
Chili sauce 1 tbsp
Brown sugar 2 tbsp
Chili flakes to taste
Water 1 cup
Lime juice 1-2 tbsp
Corn flour 2 tsp mixed in a little water
Garnishes
Fresh coriander
chopped
Large red chilli 1
finely sliced
Lime wedges
Instructions
Sprinkle salt on the fish pieces.
Coat the fish pieces in rice flour and fry in a pan in 3-4 tbsp oil until the fish is completely cooked. Take out and keep aside.
In the same pan, keep only 1 tbsp of oil and add ginger, garlic and red chili. Sauce until starts to turn golden.
Add ketchup, soy sauce chili sauce, brown sugar, chili flakes and water. Mix well allow to cook on low for 5-6 minutes.
Add corn flour mixed in a little water, cook until the gravy thickens.
Turn the flame off and add fish pieces. Try not to stir too much or the fish pieces will fall apart.
Add lime juice and stir carefully.
Garnish with lime wedges and freshly chopped coriander.
Serve with rice and your favorite greens.
