Zucchini Fritters

Ingredients
Zucchini shredded 2 cups
Salt 1 tablespoon
All purpose flour 2/3 cups
Eggs 2
Mozzarella Cheese shredded 1/4 cup
Onion 1 small
Fresh coriander a handful
Green chilies 2-3
Chili flakes 1/2 to 1 teaspoon
Chat masala 1 heaped teaspoon
Cumin powder ½ teaspoon
Coriander powder 1 heaped teaspoon
Instructions
Grate zucchini and add salt to it.
Keep aside for 10 minutes for the water to release from the zucchini.
Chop green chilies, fresh coriander and onion.
Use a cloth to squeeze out the excess water.
Add all purpose flour, eggs, mozzarella cheese, and all the dry spices.
Add the chopped ingredients.
Mix well.
Heat oil in a frying pan for shallow frying.
Take a spoonful of the batter and add to the oil and press with the help of the spoon to make it into a patty shape.
Fry on medium flame until golden.
Serve with mint chutney.
Enjoy while the fritters are hot.
