Zarda

Ingredients:

  • Rice 1 cup
  • Yellow food color as needed
  • Desi ghee 1 tbsp
  • Green Cardamom 2 to 3
  • Sugar 1 cup
  • Milk 1/3 cup
  • Raisins as needed
  • Almonds as needed
  • Pistachio as needed

 

preparation:

  1. Wash rice with water thoroughly and soak them in water for half an hour.
  2. In a pot, bring water to a boil and add food coloring.
  3. Add rice and let them boil.
  4. Cook the rice completely.
  5. When they are half way done check if the color of zarda rice is perfect. If not, add more at this step.
  6. NOTE: Make sure you cook the rice just right – I mean cook them completely. Do not over- or under cook them. Over-cooking will result in broken grain and under-cooking with result in hard grain after adding the sugar.
  7. When the rice is done, drain them out in a basket and keep aside.
  8. In a pot add desi ghee.
  9. De-seed the cardamoms and add to the ghee along with their peels.
  10. Over a medium to low flame, let the green cardamom crackle.
  11. Once it crackles, turn the flame off and let the oil cool down a bit.
  12. Now add the milk first and then sugar.
  13. Turn the flame on and leave to cook till the sugar just dissolves.
  14. Add the cooked rice. Mix carefully.
  15. Cook the rice on high heat till the liquid evaporates.
  16. Sprinkle raisins and leave on dam.
  17. Garnish with almonds, gulab jaman and pistachios.
  18. Zarda is ready. Serve hot.
  19. Enjoy!
