Zarda
Ingredients:
- Rice 1 cup
- Yellow food color as needed
- Desi ghee 1 tbsp
- Green Cardamom 2 to 3
- Sugar 1 cup
- Milk 1/3 cup
- Raisins as needed
- Almonds as needed
- Pistachio as needed
preparation:
- Wash rice with water thoroughly and soak them in water for half an hour.
- In a pot, bring water to a boil and add food coloring.
- Add rice and let them boil.
- Cook the rice completely.
- When they are half way done check if the color of zarda rice is perfect. If not, add more at this step.
- NOTE: Make sure you cook the rice just right – I mean cook them completely. Do not over- or under cook them. Over-cooking will result in broken grain and under-cooking with result in hard grain after adding the sugar.
- When the rice is done, drain them out in a basket and keep aside.
- In a pot add desi ghee.
- De-seed the cardamoms and add to the ghee along with their peels.
- Over a medium to low flame, let the green cardamom crackle.
- Once it crackles, turn the flame off and let the oil cool down a bit.
- Now add the milk first and then sugar.
- Turn the flame on and leave to cook till the sugar just dissolves.
- Add the cooked rice. Mix carefully.
- Cook the rice on high heat till the liquid evaporates.
- Sprinkle raisins and leave on dam.
- Garnish with almonds, gulab jaman and pistachios.
- Zarda is ready. Serve hot.
