Zucchini Fritters
Ingredients
- Zucchini shredded 2 cups
- Salt 1 tablespoon
- All purpose flour 2/3 cups
- Eggs 2
- Mozzarella Cheese shredded 1/4 cup
- Onion 1 small
- Fresh coriander a handful
- Green chilies 2-3
- Chili flakes 1/2 to 1 teaspoon
- Chat masala 1 heaped teaspoon
- Cumin powder ½ teaspoon
- Coriander powder 1 heaped teaspoon
Preparation
- Grate zucchini and add salt to it.
- Keep aside for 10 minutes for the water to release from the zucchini.
- Chop green chilies, fresh coriander and onion.
- Use a cloth to squeeze out the excess water.
- Add all purpose flour, eggs, mozzarella cheese, and all the dry spices.
- Add the chopped ingredients.
- Mix well.
- Heat oil in a frying pan for shallow frying.
- Take a spoonful of the batter and add to the oil and press with the help of the spoon to make it into a patty shape.
- Fry on medium flame until golden.
- Serve with mint chutney.
- Enjoy while the fritters are hot.
